Ingredients:
1 bell pepper
1/4 cup cooked rice
1/4 cup cooked chicken, shredded
1/4 onion, finely chopped
1/4 cup diced tomatoes
1 tbsp cooking oil
1/4 tsp paprika
1/4 tsp garlic powder
Salt (1/4 tsp)
Instructions:
Preheat oven to 375°F (190°C). Slice the top off the bell pepper and remove the seeds.
Heat cooking oil in a skillet over medium heat. Sauté onion until softened. Add the cooked rice, chicken, diced tomatoes, paprika, garlic powder, and salt. Mix well.
Stuff the bell pepper with the rice and chicken mixture. Place it in an oven-safe dish.
Bake for 15-20 minutes, or until the pepper is tender. Serve warm.
