Ingredients:
1/4 cup cooked rice
1/4 cup cooked black beans
1/4 onion, diced
1/4 bell pepper, diced
1/4 cup diced tomatoes
1 tbsp cooking oil
1/4 tsp cumin
1/4 tsp paprika
Salt (1/4 tsp)
Instructions:
Heat cooking oil in a skillet over medium heat. Sauté the onion and bell pepper until softened.
Add the black beans, diced tomatoes, cumin, paprika, and salt. Stir well and cook for 3-4 minutes.
Serve the mixture over the cooked rice in a bowl. Garnish with extra sautéed vegetables if desired.
