Ingredients:
1/4 cup cooked rice
1/4 cup cooked chicken, shredded
1/4 onion, diced
1/4 bell pepper, diced
1/4 cup diced tomatoes
1 tbsp cooking oil
1/4 tsp paprika
1/4 tsp cumin
Salt (1/4 tsp)
Instructions:
Heat cooking oil in a skillet over medium heat. Sauté onion and bell pepper until softened.
Add the cooked chicken, diced tomatoes, paprika, cumin, and salt. Stir and cook for 2 minutes.
Stir in the cooked rice and mix everything thoroughly. Cook for another 2-3 minutes until heated through.
Serve hot as a simplified version of paella.
