Ingredients:
2 eggs
1/4 onion, diced
1/4 bell pepper, diced
1 tbsp butter
Salt (1/4 tsp)
Black pepper (1/8 tsp)
Instructions:
Crack the eggs into a bowl, add salt and black pepper, and whisk until combined.
Heat butter in a non-stick pan over medium heat.
Sauté the onion and bell pepper until softened, then spread them evenly in the pan.
Pour the whisked eggs over the vegetables, tilting the pan to spread evenly.
Cook for 2-3 minutes until the edges are set. Fold the omelet in half and cook for 1 more minute.
Slide onto a plate and serve warm.
