Ingredients:
1/4 cup rice
1/4 cup cooked chicken, shredded
1/4 cup beans (cooked)
1/4 cup diced tomatoes
1/4 onion, diced
1/4 bell pepper, diced
1/4 cup beef broth
1 tbsp cooking oil
1/4 tsp paprika
1/4 tsp cumin
Salt (1/4 tsp)
Instructions:
Preheat the oven to 375°F (190°C).
Heat cooking oil in a skillet. Sauté onion and bell pepper until softened. Add the diced tomatoes, paprika, cumin, and salt. Stir and cook for 2 minutes.
Stir in the cooked chicken, beans, rice, and beef broth. Mix well and transfer to a small oven-safe dish.
Bake for 15-20 minutes, or until the casserole is heated through and slightly crispy on top.
Serve warm as a hearty main dish.
