Ingredients:
1/4 cup raw chicken
1/4 cup rice
1/4 onion, finely diced
1 tbsp cooking oil
1/2 cup beef broth
Salt (1/4 tsp)
Black pepper (1/8 tsp)
Instructions:
Poach chicken in the beef broth for 10-15 minutes until fully cooked. Remove and set aside. Reserve the broth.
Heat cooking oil in a pot and sauté the onion until softened. Add the rice and stir to coat it in the oil.
Pour in the reserved chicken broth and salt. Cover and cook on low heat for 15-20 minutes until the rice is tender.
Serve the chicken over the cooked rice, seasoned with black pepper. Garnish with more sautéed onions if desired.
