Ingredients:
1/4 cup cooked chicken, shredded
1/4 cup rice
1/4 onion, diced
1/4 bell pepper, diced
1/4 cup diced tomatoes
1/4 tsp paprika
1/4 tsp garlic powder
1/4 tsp cumin
1 tbsp cooking oil
1/2 cup beef broth
Salt (1/4 tsp)
Instructions:
Cook the rice according to package instructions.
Heat cooking oil in a pot over medium heat. Sauté the onion and bell pepper until softened.
Add the chicken, diced tomatoes, paprika, garlic powder, cumin, and salt. Stir well.
Pour in the beef broth and simmer for 10 minutes.
Serve the gumbo over the cooked rice in a bowl.
