Ingredients:
1 tortilla
1/4 cup cooked chicken, shredded
1/4 cup diced tomatoes
1/4 onion, diced
1/4 bell pepper, diced
1 tbsp cooking oil
1/4 tsp paprika
1/4 tsp cumin
Salt (1/4 tsp)
Instructions:
Preheat oven to 375°F (190°C).
In a skillet, heat cooking oil and sauté onion and bell pepper until softened. Add the chicken, diced tomatoes, paprika, cumin, and salt. Stir and cook for 2-3 minutes.
Spoon the mixture into the center of the tortilla. Roll it up tightly and place it in a small oven-safe dish.
Bake for 10 minutes, or until the tortilla is slightly crisp. Serve warm.
