Ingredients:
1/4 cup cooked chicken, shredded
1/4 cup diced potatoes
1/4 onion, diced
1/4 bell pepper, diced
1/4 cup diced tomatoes
1 cup beef broth
1 tbsp cooking oil
1/4 tsp paprika
Salt (1/4 tsp)
Black pepper (1/8 tsp)
Instructions:
Heat cooking oil in a pot over medium heat. Sauté the onion and bell pepper until softened.
Add the diced potatoes, tomatoes, beef broth, paprika, salt, and black pepper. Bring to a boil.
Reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
Stir in the cooked chicken and cook for 2 more minutes to heat through.
Serve hot as a hearty stew.
