Ingredients:
1/4 cup cooked chicken, shredded
1/4 onion, diced
1/4 bell pepper, diced
1/4 cup diced potatoes, boiled until tender
1/4 cup beef broth
1 tbsp butter
1 tortilla (used as crust)
1/4 tsp salt
1/4 tsp black pepper
Instructions:
Preheat the oven to 375°F (190°C).
In a pan, melt butter over medium heat. Sauté onion and bell pepper until softened.
Add the cooked chicken, boiled potatoes, beef broth, salt, and pepper. Simmer until the mixture thickens slightly.
Pour the mixture into a small oven-safe dish. Place the tortilla on top, tucking in the edges slightly.
Bake for 10-12 minutes or until the tortilla is golden and crisp.
Serve warm.
