Ingredients:
1/4 cup cooked chicken, shredded
1/4 cup rice, cooked
1/4 onion, diced
1/4 bell pepper, diced
1/4 cup beef broth
1 tbsp butter
1/4 tsp paprika
Salt (1/4 tsp)
1 tortilla (optional, for topping or layering)
Instructions:
Preheat oven to 375°F (190°C).
In a pan, melt butter over medium heat and sauté onion and bell pepper until softened.
Add cooked chicken, cooked rice, beef broth, paprika, and salt. Stir to combine and heat through.
Transfer the mixture to a small oven-safe dish. If desired, tear the tortilla into strips and layer on top for a crispy finish.
Bake for 10-12 minutes or until lightly golden on top. Serve hot.
