Ingredients:
1/4 cup cooked chicken, shredded
1/4 cup all-purpose flour
1/4 tsp baking powder
1/8 tsp baking soda
1 tsp sugar
1/4 cup milk
1 egg (use half for one serving, or make a slightly larger batch)
1/2 tbsp butter, melted
Additional butter or oil for greasing
Instructions:
Prepare the waffle batter: Mix the flour, baking powder, baking soda, and sugar in a bowl. In another bowl, whisk together the milk, egg, and melted butter. Combine the wet and dry ingredients.
Preheat a waffle iron and lightly grease it. Pour the batter into the waffle iron and cook until golden brown.
Reheat the cooked chicken in a pan or oven until warm.
Serve the warm chicken on top of the waffles. Add butter or syrup if desired.
