Ingredients:
1/4 cup cooked black beans
1/4 onion, diced
1/4 bell pepper, diced
1/4 cup diced tomatoes
1/2 cup beef broth
1 tbsp cooking oil
1/4 tsp garlic powder
1/4 tsp cumin
Salt (1/4 tsp)
Black pepper (1/8 tsp)
Instructions:
Heat cooking oil in a pot over medium heat. Sauté the onion and bell pepper until softened.
Add the black beans, diced tomatoes, beef broth, garlic powder, cumin, salt, and black pepper.
Simmer for 10-15 minutes, stirring occasionally, to allow flavors to meld.
Blend a portion of the soup using a fork or a blender for a thicker consistency, if desired. Serve warm.
